White Rabbit Brewery – Healesville

White Rabbit is a brewery that doesn’t want to be constrained….and maybe that’s why we like it up in the Hills, away from the norm, a place that we are free to think for ourselves.

At home in Healesville in the midst of the Yarra Valley, we like to exercise our right to be a little different and brew beer that doesn’t just follow the others.

So what is it that we do? Well, someone said that to describe what we’re up to at White Rabbit is a bit like a couple of Belgian hippies gatecrashing a lovely, traditional English tea party!

White Rabbit was not born to follow. To be different is easy…to be
different and remain a wonderful drinking beer is hard. You have to start with tradition but then you need to expand your mind a little!

White Rabbit is proudly part of the Yarra Valley community, an area punching well and truly above its weight in terms of beautiful produce, superb wines and as a calming destination for worn out city folk to take a deserved break.

We think we’re pretty lucky to be in an area with so much going on and such natural beauty.

Breweries throughout the ages have been an integral part of a community, a place where people get together to talk, interact and solve the problems of the world… and that’s excactly what we hope to deliver to our neighbourhood here in Healesville and we hope that you can share in it too.

Whether you’re a local or a visitor there’s a lot to share in our neighbourhood….food, wine, beer (of course), art, hot air ballooning  hiking, mountain biking, cruising the “spur”….come and be a part of it!

The White Ale

The White Ale product story starts in medieval times with brewers’ experimentation with wheat & spice as the predominant ingredients of flavour. The Belgian monks played with coriander, orange peel and other oddball additions, and suspended the yeast to create a cloudy white appearance…hence the description.

With our “monkish” use of a specially selected belgian yeast strain and voracious appetite to create intriguing and delicious styles, we couldn’t resist the idea of tackling the invention of a great Australian White.

White Rabbit White Ale delivers refreshing hints of coriander, juniper berry and bitter orange, with fresh fruity aromas and only a gentle amount of bitterness. A small touch of additional yeast at bottling naturally conditions the ale, with a final abv of 4.5%.

Imagine Belgians snuggling out of the cold in wonderful little ale houses dreaming of places like Australia to drink such a beer.

The Dark Ale

An intriguing dark ale that moves to it’s own beat, our minds set about creating a beer that contradicted itself….rich dark and flavoursome but at the same time ever refreshing….malt driven but with the aromatic lift of generous doses of hops.

Raisin like ester characters derived through its open fermentation bind a balancing act of flavour with a malt bill that rewards the parched palette with a rich, dark colour without losing any sessionabilty qualities, which we love so much in a beer.

Passed through a hop back generously laden with whole hop flowers and then dry hoped in the open fermenters, at 4.9% abv this is a dark ale with plenty of reassuring bitterness…..
